Vegetable sauce

As I’m currently working from home, I have the privilege of being able to cook for lunch every day, which I absolutely love!

I had some leftover rice that had to be centerpiece of my lunch today, so while the caramel is cooking, I decided to make some vegetable sauce to go with the rice.

Garlic, onion, carrot, chili and spring onion goes in a pan with olive oil

Add some beautiful fresh tomatoes cut into smaller pieces, along with a can of chopped tomatoes and some salt, and boil for 10 minutes with the lid on.

When boiled add some fresh basil, some fresh spinach and some dried oregano. Season to taste with pepper and salt. Pour on a plate, top with the heap of brown rice (I think I had 0.75 dl of boiled rice) and grate a bit of gouda cheese over. Voila!

Eat and enjoy, but remember to keep some room for the caramels – I’m posting the recipe later!
